This GI tagged rice from Assam is one of a kind “zero fuel” variety and is aptly named magic rice. All one needs to do is soak the rice in cool/room temp water for half an hour to swell and you are all ready to enjoy this delicious rice.

It is rich in protein, crude fiber, vitamins and minerals and also cools down the body fast making it a popular summer time food.

Widely recognized as “instant rice” or “soft rice” this short grain variants unique softness is a result of its low amylose content ( a starch component) which makes it easily digestible and light on the stomach.

As this soft and fluffy rice doesn’t have a distinctive flavor of its own it takes on the flavor of other stronger flavored dish added to it.
